Spinach Lentil Tomato Soup

I invented this soup today. Writing down the recipe here so I don't forget it:

(measurements are approximate, because I don't usually measure when I go soup inventing)

I use a 3 qt saucepan

about a 1/4 of a large onion, chopped
6 cloves of garlic, coarsely chopped
half a bag of baby carrots, finely chopped
enough oil to coat

Saute the above ingredients until the carrots are soft and begin to brown.

1 can of your favorite tomatoes, pureed in a blender
2 cups of broth (I used beef)
1 cup dry lentils (washed)
8 oz. frozen spinach
thyme
sage
oregano
salt
pepper

add the rest and cook until lentils are done (about 30 mins)

Serve with a sprinkle of parmesean and a glass of apple cider!
